We spoke with the Phillip Island fruit and vegetable wholesalers and they recommended that we try and use a range of different fruit and vegetables in our salads. You can use peaches andpommegranates in salads as one variation and there are several different types of sprouts and beetroots that can be incorporated. If you don’t have salad recipes then do an online search and come up with different variations to use on the menu. Pear and walnut is another variety that sells well as a side salad.
